Easy Summer Recipe: Avocado chicken salad

So a while ago I saw a video on Facebook about an avocado chicken recipe. It looked so good I had to try it.

So I got my ingredients.

I boiled the corn as I prepped everything else. You can also use frozen corn to save time and energy.

I did not anticipate how simple and easy the avocado peeling would be. It was actually super satisfying as well.

I added bacon bits, sunflower seeds, and wonton crisps. Seriously, you can do whatever you want with this. There’s literally no rules here.

I squeezed the lemon and added olive oil, salt and pepper.

Once my corn was done, I cut the kernels off.

I poured the dressed on and stirred it up.

This is legitimately one of the best things I’ve ever eaten. It plays with every taste bud. The creamy texture of the avocado. The savory chicken. The sweetness from the corn. The tang from the lemon.

I can’t say enough about this. I will definitely be making it again.
